Absolutely love their fresh cheese. Perfect for a summer snack on its own with honey or on mini baguette slices with tomato and basil. The St. John one is crumblier and softer whereas the Spanish fresh cheese is spongier and chewier. Both have a mellow milky taste. We kept the St. John one in the fridge for a week and it still tastes very fresh and delicious but the water drained out so it gets chewier (more similar to the Spanish fresh cheese) overtime. Less

The St. John's fresh cheese in the white and red tub is the best fresh cheese I've ever tasted, it truly is remarkable. I'll try the Santa Maria fresh cheese next, the one in the blue and white tub, but I'll be amazed if I love it even more than the red tub, that stuff is cheese gold!! Update: the Santa Maria is also great, slightly different flavour, nice to change things up, but the St John's is still #1. I just bought a fresh batch from Highland Farms, yum! Less
