Louisiana Backwater Charters

My friends and I spent last weekend fishing with Brian Hanchey and Louisiana Backwater Charters and had an absolute blast. The accommodations, meals and fishing were all first rate.
Brian's new guest house is a spacious, four bedroom four bath cabin that has a large, state of the art kitchen that's open to both the living and dining areas. The cabin also has plenty of outdoor space in which to relax. The camp also includes a bunk room and screened in porch as part of the boathouse. There's also a lighted dock for night fishing.
The fishing was absolutely incredible all weekend. Both days, Brian, along with his two guides, Randy and Devon, put us on huge schools of Speckled Trout and Redfish. It was the kind of fishing where you would have long stretches of getting a bite on nearly every cast that you made. I did have to teach Randy a thing or two about the effectiveness of free-lining a shrimp and bouncing it off the bottom to attract trout, as opposed to using a popping cork, but he eventually came around to it being an acceptable strategy after I landed a half dozen trout in ten minutes using that technique. 😉 We limited out each day and returned home with 400 Spec and Redfish fillets. Primo fishing.
Lastly, I would be remiss not to mention the delicious food that Brian's cook, Susy, prepared for us. She made a full breakfast including biscuits, eggs, bacon, sausage and hash brown casserole one day and incredible King's Hawaiian ham, egg and cheese sliders the next. She also packed tasty sandwiches for lunch, but her dinners stole the show. One night she prepared shrimp etouffee accompanied by a mixed green salad, asparagus and perhaps the best bread pudding that I've ever had. Saturday Susy broiled and seared a beef tenderloin for dinner, along with a nice salad, twice baked potato casserole and Mississippi Mud Pie for dessert. Needless to say, I didn't lose any weight on this trip.
I know this review is a bit long, but a fishing trip as good as the one we experienced is hard to condense into a few words. Brian and his entire crew provide a first rate experience for those who love to fish. Frankly, it wouldn't be bad for those who don't! I can't recommend it enough.
